Method:

1 Boil the baby potatoes until tender, then peel them.

2 Heat mustard oil in a pan and sauté fennel seeds, ginger powder, and Kashmiri red chili powder

3 Add the yogurt and cook until the gravy thickens.

4 Add the potatoes, salt, and garam masala. Let it simmer for 20 minutes on low heat

2 Keralan Fish Curry

Keralan Fish Curry is a vibrant and flavorful dish from Kerala, famous for its tangy and spicy coconut-based curry. The curry is made with fish like Kingfish or Tilapia and simmered in a fragrant gravy made with tamarind, coconut milk, and a mix of spices like turmeric, coriander, and curry leaves. Ingredients:

  • 500g fish fillets (Kingfish or any firm fish)
  • 1 cup coconut milk
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 tbsp tamarind paste
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2-3 dried red chilies
  • Fresh curry leaves
  • Salt to taste

Method:

1 Prepare the Fish: Clean and cut the fish into medium-sized pieces.

Add mustard seeds and let them splutter.

Heat coconut oil in a clay pot or deep pan.

  • 2 tbsp yogurt
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • tsp coriander powder
  • 1 tsp cumin seeds
  • 1 tbsp ghee
  • 1/2 tsp garam masala
  • 2 cups water
  • Salt to taste

Method:

1 Mix besan, yogurt, turmeric, red chili powder, salt, and a little water to form a firm dough

2 Roll the dough into small cylindrical logs and boil them in water until they float.

3 In a pan, heat ghee, add cumin seeds, and sauté the dumplings

4 Prepare a gravy using yogurt and spices, then add the dumplings.

5 Simmer and serve hot with roti or rice.
